Coming Back To Life {and a recipe}

I can't believe it. After 4+ months of construction and the disaster that goes with it my house is almost done. Our final inspection is set for Tuesday and then I will hopefully be able to convince my husband to move me in. (I'd do it myself if I could but being 6 1/2 months pregnant makes things a little difficult).

Once I get settled in our new addition I will actually have a craft room (I know! I can't wait!) and I look forward to being able to post some of the fun stuff I do again. Plus I have a new kitchen in which I can try out all sorts of fabulous new recipes. And of course with baby #3 on the way I'm sure I'll have tons of parenting stories to share. So I hope, at least until baby comes, I'm back.

And to start, since my craft room is ready, I'm going to share a super duper yummy recipe. I got this from my Aunt, who got it from her daughter-in-law, who probably got it from someone else, and so on. I don't know what they call it so I've made up my own name. Enjoy!

Peanut Butter Thai Wraps

1/4 C. Peanut butter
2 Tbsp. Seasoned rice vinegar
2 Tbsp. Honey
2 Tbsp. Sugar
1 Tbsp. Water
1 Tbsp. Soy sauce
1 1/2 tsp. Kosher salt
1/2 tsp. cayenne pepper
pinch of crushed red pepper

Combine all with a whisk and set aside.

16 oz. coleslaw mix (don't let this turn you off...I promise it's yummy)
1 bunch cilantro, chopped
1 red bell pepper, diced
1 cucumber, peeled, diced
1 C. chopped peanuts
Edamame (for some reason I don't have an amount on this so just throw in as much or a little as you like)

Toss all together.

Put coleslaw mix on tortilla (I prefer the ones you buy raw and cook at home...SO YUMMY!!) and drizzle with peanut butter dressing. Wrap and enjoy.

Where do you buy raw tortillas?

Costco usually but occasionally you can find them at walmart.
