Saturday Is A Special Day

It's the day my kids get pancakes. Or, used to be anyway. See, when my husband was in Medical school he would get up every Saturday morning with the kids and make them pancakes for breakfast. I loved it because I got to sleep in a little bit and the kids loved it for the pancakes. Having Dad around wasn't bad either! Sadly, now that my husband is in his residency and doesn't get many Saturdays off anymore, the kids don't get pancakes very often. I make pancakes every once in a while when they beg me to, but the thing is I just don't like pancakes. At all! I would much rather have french toast or my absolute favorite Swedish pancakes (crepes with strawberries an whipped cream) I was feeling bad though a couple weeks ago and feeling like a bad mom because I was forcing my kids to eat cereal on Saturday morning, so I went ahead and made them some pancakes only I decided to spice things up a little bit. We've done blueberries before or chocolate chips, but on this particular day I decided to go all out. First I mixed up the regular pancake mix, then I chopped up some white baking chocolate and then I chopped up some frozen raspberries. I should also mention that one of the reasons I don't like pancakes, besides the taste reason, is because they are too thick, so I pretty much triple the amount of liquid the mix calls for and they are much better. Anyway, my girls and I gently stirred up our pancake batter (too much stirring makes the batter purple) and plopped some of that batter on our griddle.







These pancakes were so good that I ate mine with my hands while I was cooking the rest. No syrup needed, although my kids still like syrup on theirs. Have I mentioned I'm also not a big fan of maple syrup. Anyway, We've had them a couple times since then and If I'm not so hungry that I can wait a few minutes and sit down with everyone to eat than I usually do some butter and a sprinkling of powdered sugar. One day I was even really naughty and put whipped cream on top. YUM!






Of course my husband couldn't let me out do his pancakes, so the next Saturday he was home he mixed up a batch and then threw in a little cinnamon and some cinnamon chips. Those weren't bad either.

We used to do pancakes on Saturday mornings with peanut butter, bananas, maple syrup and powdered sugar. YEAH - talk about unhealthy (but oh so good). Now, we sometimes do pancakes but much healthier with whole wheat flour, oat four...and other home milled grains but mostly we just splurge and let ourselves enjoy chocolate-green smoothies. SOO GOOD and SOOOO healthy!

I am SO excited to try these. Raspberries and white chocolate! Nothing could be better! YUMMY!

Our family adds vanilla, cinnamon, and chopped pecans to ours. They are pretty yummy! I think we may have to try the raspberries and white chocolate though. Thanks for sharing. :)
