More Please! Cooked Carrots

Have you ever been sitting in the kitchen trying to come up with something for dinner, and suddenly you remember a dish that you love but had completely forgotten about? Well, I have a terrible memory so it happens to me a lot, and this week I remembered how much my whole family loves cooked carrots. I used to make these several times a week and then for some reason just stopped making them. When I finally did make them again last week my kids were so excited to see them on the table and were all disappointed when they asked for more but there were none left. Yes, they really are that good. And so simple too. All you have to do is slice up some carrots (I did 5 medium sized ones, but will have to do more next time) throw on a few slices of butter, and sprinkle generously with salt. And the salt really is important because it is what brings out the sweetness of the carrots. Put the lid on those bad boys or cover them with foil and bake at 350 for about 40 minutes. They will be soft enough to eat after 30 minutes, but I've discovered that it's in those last ten minutes when they really get sweet. All that's left to do is wow you kids with how awesome cooked carrots can taste! Now, I don't generally measure how much butter or salt I'm using, but since I hate when people post recipes with vague amounts I gave it a shot this time. So, if you want an official looking recipe, here it is. Cooked Carrots

  • 5-6 carrots, peeled and sliced

  • 1 Tbs butter sliced

  • Less than 1/2 a tsp, but more than 1/4 tsp salt. (how's that for vague!)
Bake covered at 350 degrees for 40 minutes. Enjoy!

Having personally made these I can attest to their deliciousness. I usually cook mine 30 minutes because my hubby doesn't like them too soft. But 40 minutes is the way to go for the best taste. So yummy!
