The Best Soup Ever! aka Cheese Soup

I'm sorry if you came here today for something fun and exciting and now your thinking "Really, a soup recipe?" But don't click away just yet. I'm actually working on some DIY at home hair masks, but I still have one more to try on myself before I give them to you. Also, my camera is still in the shop. I got on the website today and browsed through some of the reviews (you think maybe I should have done that first!) Apparently 2-3 weeks can sometimes turn into 6 weeks and the price they quote isn't always what they ask for when you go to pick it up. I'm trying really hard not to get myself all worked up about it just yet. And finally, This soup really is AWESOME! I made it for dinner twice this week. This is the only soup that my kids will devour and after the first time there wasn't any left for me to save for lunch the next day, so I had to make it again and make a little more. Then, on Wednesday after we had eaten it for the second time, I snuck down stairs at 11:00 at night to finish off what was left in the fridge. What? I'm pregnant!

If any of you know our cousin Amy, you may have seen this once on her meal planning blog. Jenn did a guest post for her and used MY soup recipe. It's OK Jenn, I already forgave you! Although if I'm being honest it's actually my friend Jenny's soup recipe. However, I lost contact with Jenny about five years ago so I now claim it as my own. Are you out there Jenny?

So, here is my most awesome of all awesome soup recipes, sadly without any pictures. Remember, no camera and a little late night kitchen rendezvous means no soup left to even camera phone photograph.

*Update* Jenn, was nice enough to email me a picture of her stolen soup recipe this morning. She leaves the celery out, but even if you don't like celery I still think you should give it a try. I hate celery, but I don't mind it in this soup at all!


Cheese Soup
2 C. Diced Potatoes
1/2 C. Diced Carrots
1/2 C. Celery
1/4 C. Onion
2 C. Water
1 tsp Salt
1/4 tsp Pepper

1/4 C. Butter
1/4 C. Flour
2 C. Milk
2 C. Grated Cheddar Cheese (Sharp is the best)
1 C. Diced Ham

(feeds my family of five)

In a medium saucepan combine potates, carrots, celery, onion, water, salt, and pepper. Bring to a boil then reduce the heat and simmer for 10 minutes. DO NOT DRAIN THE WATER!

In a large saucepan melt the butter over medium heat and add flour stirring well to form a smooth paste. Add the milk and stir constantly until the mixture thickens. Add the cheese and stir until melted. Next add in the ham and pour in the contents of the other pan, including the water. Stir until well combined and then enjoy, enjoy, enjoy!

It's true. I don't like celery much. But the reason I leave it out is more for Chris. He hates it. (Plus I never have it in my fridge because we dont eat it). I just double up on the carrots instead. Also, I boil mine for 15 minutes to make my potoatoes extra soft.
